Curious about fermented juice? Lemon and ginger are a classic combination. As well as being tasty, lemons are packed with Vitamin C and ginger contains gingerol which helps keep nutrients moving through your gut.


Enhancing this flavour combination by following this fermented lemonade recipe supercharges a tasty drink with even more gut health benefits. The process of making fermented lemonade itself can be a calming exercise, plus you are making a delicious gut health recipe to share with friends!



INGREDIENTS:

 

  • 500g organic lemons

  • 1 tbsp grated ginger

  • 125ml whey (a byproduct from dairy production that you can buy or make at home)

  • 75g organic cane sugar, plus ½ tbsp

  • still mineral water, to top up



YOU’LL NEED:

  • 3 sterilised glass bottles

  • A sterilised 3 litre jar

The fermenting process should take four or five days. Once made, the fermented lemonade should be consumed within a week.


INSTRUCTIONS:

  1. Juice the lemons and filter through a sieve. Put the lemon juice, ginger, whey and sugar into a 3-litre sterilized jar and top up with mineral water, leaving 2.5cm free at the top

  2. Shake thoroughly and leave it at room temperature for 2 days, releasing gas regularly by opening the lid.

  3. After 2 days, pour the mixture into glass bottles, adding a little of the ½ tbsp sugar to each. Seal and ferment at room temperature for another 2-3 days (opening every day) until you see bubbles.

  4. Now it’s ready to be put in the fridge to stop any further fermentation. Enjoy the gut healthy lemonade within a week.
